MP2 encodeing on OS X = ?

I have OS X on a mac mini.

I can’t get Itunes to encode anything.
The encoder is a mystery to me.
I need to convert mp2 files to AIFF.
and,
convert AIff to mp3 format.
Can somebody instruct me on this procedure.
I’ve tried following MAC HELP routines,
but they don’t work.

I’m not a tech geek, I’m a novice dolt.

In the Advanced menu in iTunes it has a command to encode the selected tracks to whatever the current encoder is set to in the Preferences. So if you set the encoder to encode to AIFF or MP3 in iTunes’ Preferences, then the menu item in the Advanced menu will do what you want.

There are a bunch of audio conversion programs you can use to accomplish this task under Mac OS X, actually, including Music Man and Sound Grinder, but my favorite tool is the Australian-produced Switch, which also has a Windows version available. You can search and find it.
